I’m going to keep this post short and sweet because for one, this recipe is long overdue, and two, there’s really no other way to know what I’m talking about than to make this apple cake yourself. It is truly the best ever.

Quick back story…my mom had been talking about making this apple cake for months. It’s a recipe from her childhood, and she insisted it was incredibly delicious. We have similar tastes when it comes to sweets (we like dense, gooey textures and extra buttery, sweet flavors), so I knew this probably was going to be something I liked.

So finally for her birthday, we got around to making it for breakfast one morning. We followed the simple recipe, written down by my grandma on an old, wrinkled piece of paper. And honestly, it exceeded all of my expectations. I can’t even pinpoint what it is, but there’s something about the flavor of this cake and the (truly out of this world) texture that makes it really so special.

I will now forever make this apple cake over and over again, and I hope you do, too. It is just that good!!

(P.S. I used my grandma’s tube pan to make this cake. Here’s a similar pan I found to make this yourself!)

The Best Ever Apple Cake

a dense, decadent apple cake with clean and crisp sweet flavor

serves: 8

Ingredients

Apples

  • 45 honey crisp apples, peeled and sliced thin
  • 5 tbsp sugar
  • 1 tbsp cinnamon

Cake Batter

  • 4 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 cups all-purpose flour, sifted
  • 1 tbsp baking powder
  • 2 ½ tsp pure vanilla extract
  • ½ cup orange juice (no pulp)

Instructions

  1. Combine the sliced apples with the sugar and cinnamon in a large bowl. Mix well to incorporate.
  2. Let sit while you make the cake batter.

Cake Batter

  1. Preheat the oven to 350°F. Prepare a tube pan by greasing it with butter and then dusting it with flour. Tilt the pan around so that the flour coats the entire interior. Shake off any excess flour.
  2. Beat the eggs in a large mixing bowl. Add the sugar and whisk until smooth. Whisk in the vegetable oil.
  3. Whisk in the sifted flour and baking powder until just combined. Stir in the vanilla and orange juice.
  4. Pour half of the batter into the bottom of the tube pan. Spread half of the apple mixture over top the first layer of the batter.
  5. Pour the rest of the batter into the pan, and then add the remaining apples over top. Press the apples slightly into the batter. Bake for 1 to 1 ½ hours, or until a toothpick comes out clean (or if you you’d like an extra gooey cake, pull it out of the oven a little earlier).
  6. Let the cake cool in the pan slightly. Remove the outer layer of the pan, keeping the “tube” intact. Serve slices warm or at room temperature.
